Garlic Butter Shrimp & Veggies
Ingredients:
- 1 lb shrimp (peeled & deveined)
- 2 tbsp butter
- 3 cloves garlic (minced)
- 1 cup cherry tomatoes (halved)
- 1 zucchini (sliced)
- 1 bell pepper (sliced)
- 1 tsp Italian seasoning
- 2 cups cooked quinoa or rice
- Salt & pepper to taste
Instructions:
- Melt butter in a large pan over medium heat. Add garlic and sauté for 30 seconds.
- Add shrimp and cook for 2-3 minutes per side until pink.
- Remove shrimp and add cherry tomatoes, zucchini, and bell pepper.
- Sauté for 3-4 minutes, then return shrimp to the pan.
- Season with salt, pepper, and Italian seasoning. Serve over quinoa or rice.
