Chickpea & Spinach Curry
Ingredients:
- 1 can chickpeas (rinsed)
- 1 cup spinach
- 1 cup coconut milk
- ½ onion (chopped)
- 2 cloves garlic (minced)
- 1 tsp curry powder
- 1 tsp cumin
- 2 cups cooked rice
Instructions:
- Sauté onion and garlic for 2 minutes.
- Add chickpeas, spinach, coconut milk, and spices.
- Simmer for 5 minutes and serve over rice.
