Garlic Butter Shrimp & Veggies

Ingredients:

  • 1 lb shrimp (peeled & deveined)
  • 2 tbsp butter
  • 3 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • 1 zucchini (sliced)
  • 1 bell pepper (sliced)
  • 1 tsp Italian seasoning
  • 2 cups cooked quinoa or rice
  • Salt & pepper to taste



Instructions:

  • Melt butter in a large pan over medium heat. Add garlic and sauté for 30 seconds.
  • Add shrimp and cook for 2-3 minutes per side until pink.
  • Remove shrimp and add cherry tomatoes, zucchini, and bell pepper.
  • Sauté for 3-4 minutes, then return shrimp to the pan.
  • Season with salt, pepper, and Italian seasoning. Serve over quinoa or rice.
