Chickpea & Spinach Curry

Ingredients:

  • 1 can chickpeas (rinsed)
  • 1 cup spinach
  • 1 cup coconut milk
  • ½ onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tsp curry powder
  • 1 tsp cumin
  • 2 cups cooked rice



Instructions:

  • Sauté onion and garlic for 2 minutes.
  • Add chickpeas, spinach, coconut milk, and spices.
  • Simmer for 5 minutes and serve over rice.
